1 bunch of young green garlic
3 eggs

How to make tender garlic omelet step by step
Clean the garlic, removing the first layer and the roots. Cut into thin slices and set aside.
In a bowl, beat the eggs with a pinch of salt.
In a frying pan with a little olive oil, fry the garlic over medium heat until tender but not browned.
Mix the garlic with the beaten egg and stir well.
Pour the mixture into the hot pan and let it set on one side.
Turn it over with the help of a plate or lid and cook for a couple of minutes more.
And ready! A juicy and full-flavored omelet with tender garlic.

Tricks to make a perfect garlic omelette
Do not overcook the garlic, just until it is poached. If roasted, they can become bitter.
You can add a splash of milk or a spoonful of cream cheese to make the omelet juicier.
If you like thicker tortillas, double the quantities and use a smaller pan.
