Rabbit with garlic is a recipe that takes me directly to my uncle Pedro’s kitchen, where I learned to prepare it in my years in Esparraguera. It is one of those traditional dishes that combine simplicity and flavor, and that we have continued cooking at home generation after generation. Today I want to share with you this traditional rabbit with garlic recipe, as we have always made it in my family.

This rabbit with garlic ( as my husband says) is characterized by its intense flavor, thanks to a good chopped almonds and hazelnuts, lots of garlic and a touch of white wine. Although the recipe is simple, the result is a dish with a spectacular sauce that conquers everyone.

I usually prepare this dish when the whole family gets together, as it is perfect for celebrations, special Sundays or any occasion when you want a tasty and homemade second course. In the video you will see that I also add a little chicken, because my daughter-in-law doesn’t like rabbit. The truth is that this recipe also serves as a base for a delicious garlic chicken, following the same steps.

Ingredients for 4 persons

  • 1 rabbit, chopped

  • 150 g almonds

  • 50 g hazelnuts

  • 2 garlic heads

  • 4 garlic cloves

  • Extra virgin olive oil

  • Salt to taste

  • ½ glass of white wine

  • 1 tablespoon flour

  • 1 glass of water

How to make rabbit with garlic

  1. Peel the 4 cloves of garlic and crush them together with the almonds and hazelnuts. Reserve this minced mixture.

  2. In a large casserole, brown the rabbit together with the liver. Add salt to taste.

  3. Add the two whole heads of garlic.

  4. Remove the liver once browned, and add it to the previous mince. Grind everything well.

  5. We make a hole in the center of the casserole, putting aside the rabbit on the sides, and fry the spoonful of flour until toasted.

  6. Add the white wine, stir and then add the crushed minced meat and a glass of water. Mix well.

  7. Check the salt level, cover the casserole and cook over low heat for approximately 1 hour.

  8. And it’s ready to serve! A homemade recipe, with an irresistible sauce.

Tricks to make a good rabbit in garlic sauce

  • Liver is key: do not omit it from the mince, as it adds a very special flavor to the sauce.

  • You can substitute part of the rabbit for chicken, as I do when I want to adapt the dish to all the family’s tastes.

  • Serve the rabbit with bread to dip in the sauce, you can’t miss it!
