Garlic Rabbit is one of those dishes that instantly transports us to our grandmothers’ kitchens. In my case, it takes me back to my uncle Pedro’s kitchen. Since I learned it, I’ve been making the traditional garlic rabbit recipe I picked up during those years in Esparreguera. It combines simplicity and flavor, keeping a culinary tradition alive and passing it down through generations. In my family, we’ve always continued to make this rabbit recipe—a true gem that I’m sharing here to ensure it continues to be passed down from one generation to the next.

This classic garlic rabbit recipe (an expression I’ve borrowed from my husband) is defined by its unique flavor, thanks to the combination of garlic, the traditional picada mix, and a splash of white wine. Although it’s simple to prepare, the result is a dish full of depth and nuance that everyone loves.

I usually cook this recipe when the whole family comes over for lunch. It’s perfect for any event, a holiday, or any kind of celebration. In the recipe video, I add a bit of chicken to complement the dish since my daughter-in-law doesn’t like rabbit, and chicken works wonderfully as well. In fact, you could easily make garlic chicken following the exact same steps.

Ingredients for 4 persons

  • 1 rabbit
  • 150 g of almonds
  • 50 g of hazelnuts
  • 2 garlic heads
  • 4 garlic cloves
  • Olive oil
  • Salt
  • ½ glass of white wine
  • 1 tbsp. Flour
  • 1 glass of water

How to make rabbit with garlic

  1. First, peel the garlic cloves. Then, crush them together with the almonds and hazelnuts, and set the mixture aside for later.
  2. Roast the rabbit in a casserole. We also add the rabbit liver and turn it so that it browns. Then add salt.
  3. Place two whole heads of garlic.
  4. Set the liver aside and grind it together with the almonds, hazelnuts and the four garlic cloves we made earlier.
  5. Separate the rabbit on the sides, leaving the centre free to fry the spoonful of flour.
  6. When the flour is toasted, add the wine and then the mince we made earlier, with a glass of water and salt.
  7. Stir everything together and taste for salt.
  8. Cover and simmer for an hour and will be ready to serve.

  • Do not forget the livers, as it is a fundamental part and the one that gives a touch to the mince to give a good taste to the sauce.
