Puff pastry with angel hair is one of those traditional desserts that never fails. It is a simple recipe, quick to prepare and with a spectacular result: golden, crunchy and with that sweet filling that conquers everyone.
When I prepare my apple pieI usually take advantage of the oven and also make this puff pastry to complete the snack or to have something sweet for the following days.
At home, this dessert with angel hair is my husband’s favorite -which, as I always say, is sweeter than the filling itself 😄-. It’s a lifelong recipe that I’ve been making exactly the same for years, because success is guaranteed.

Ingredients for 4 or 5 persons
2 rolls of puff pastry dough
500 g of angel hair
50 g of sliced or chopped almonds
1 egg
Sugar to taste for sprinkling

How to make angel hair puff pastry step by step
Preheat the oven to 160 °C with fan.
Spread a roll of puff pastry on a baking sheet lined with parchment paper and prick it with a fork to prevent it from rising too much.
Beat the egg and paint the edges of the puff pastry with a brush.
Spread the angel hair over the dough, leaving a small margin at the edges.
Cover with the second roll of puff pastry and press the edges with a fork to seal well.
With the same beaten egg, we paint the entire surface of the puff pastry.
Make a small hole in the center to allow the steam to breathe and gently prick the top with a fork.
Sprinkle the chopped almonds on top and add a little sugar.
Bake for 25-30 minutes, until the puff pastry is golden brown and crispy.
Let cool for a few minutes and… ready to enjoy! 😋

Tips for puff pastry with angel hair
If you want a shinier finish, mix the beaten egg with a teaspoon of milk before painting the puff pastry.
You can replace the angel hair with custard, chocolate or fruit jam.
If you like a crunchier touch, add brown sugar instead of white before baking.
