Ingredients for 4 persons
- 2 giltheads
- 5 medium potatoes
- 1 green bell pepper
- 1 onion
- 2 tomatoes
- 1 lemon
- Olive oil
- Salt
- ½ glass of white wine

How to make baked sea bream with potatoes and onion
Prepare the vegetables: Peel the potatoes and cut them into thick strips. Do the same with the onion. Cut the bell pepper into julienne strips and set aside with the onion.
Clean and prepare the sea bream: If they do not come clean, remove guts and scales. Make a cut in the central part and place half a slice of lemon inside each one. Put also a slice inside the belly of each sea bream.
Assemble the tray: In a baking tray, distribute the potatoes, onion, bell pepper and tomatoes cut in half. Season with salt and pepper to taste and drizzle with a good splash of extra virgin olive oil.
Place the sea bream: Place the sea bream on the bed of vegetables. Add a little more oil on top if desired.
Bake: Place the tray in a preheated oven at 160 °C (350 °F), in broiler mode with fan, for 30 minutes.
Add the white wine: After this time, pour half a glass of white wine on the tray. After 5 minutes (i.e. when it has been in the oven for 35 minutes), open and with a spoon, bathe the gilthead bream with the broth that has formed.
Finish cooking: Leave it 10 minutes more, until 45 minutes are completed. Remove from the oven and serve hot with all its juices.

Tricks for juicy sea bream in the oven
Do not skip the white wine: It is what gives depth and flavor to the broth. Choose a dry and quality wine.
Bathe the fish in its own juices: Halfway through cooking, pour a little of the broth over the fish. This way the baked sea bream will be juicy and tasty, without drying out.
Cut the vegetables evenly: they will cook at the same time as the fish and will be cooked to perfection.
