Ingredients for 3 persons
- 6 medium squid
- ½ kilo of minced pork
- 2 onions
- 4 tomatoes
- 1 red bell pepper
- 5 medium eggs
- 50 g almonds
- ½ glass of white wine
- Extra virgin olive oil
- Salt to taste
- Flour (to coat the squid)
- Black pepper
- ½ cup of water
- Small chopsticks

How to make stuffed squid step by step
Clean the squid well: remove the fins and legs and set them aside.
Turn the squid over to clean them well inside. Once cleaned, set aside.
Chop the almonds into small pieces (granules) and set aside.
Crush the onions and place them in two separate bowls.
Peel and crush the tomatoes, and place them in two different bowls.
Grind the reserved squid fins and legs.
Cut the red bell pepper into small cubes and set aside.
Boil the eggs with salt for 12-15 minutes. Then, set them aside for the filling.
In a medium frying pan, sauté the crushed fins and legs. Turn them a few times to release the water and remove the water from the pan.
Add olive oil and sauté the fins and legs again until done. Set aside.
In a large skillet, sauté the ground beef with olive oil, stirring until loose and browned.
Add salt and pepper to taste, add a little more oil if you see that it is dry, and set aside when well fried.
In the same pan, add the red bell pepper and sauté it.
When the bell pepper is poached, add one of the bowls of crushed onion.
Once the onion is poached, add one of the bowls of crushed tomato and add a little salt.
When everything is fried, add the minced meat, the legs and the reserved fins. Mix well and transfer this mixture to a large platter.
Peel the boiled eggs, grate them on top of the mixture and stir everything well to integrate.
Stuff the squid with this mixture and close them with a toothpick.
Dredge the squid in flour and fry them in a deep pan with olive oil over medium heat until golden brown. Set aside.
In the same pan, sauté the second bowl of crushed onion.
When the onion is poached, add the chopped almonds, stir a couple of times and add the second bowl of crushed tomato.
When everything is well fried, add the glass of white wine and stir to deglaze.
Add the cup of water and salt to taste.
Place the fried squid in the pan, cover and simmer for 15 minutes.
And now you have your stuffed squid in sauce, ready to serve!

Tricks for spectacular stuffed squids
- The touch of chopped almonds in the sauce makes the flavor much richer and special.
- If you don’t have toothpicks, you can use kitchen string to close the squid.
- To prevent them from breaking, fry them lightly just until they get color before putting them in the sauce.
